My friends Laura and Steve had a wonderful Christmas dinner for friends last week. The food and the company were great, but my favorite thing was the Oreo Snowballs. Oreos happen to be one of my guilty pleasures, so Oreo cheesecake or just a couple Oreos with a glass of milk are quite a temptation. These are better. So thank you, guys, for these.
INGREDIENTS
24 Oreo cookies
4 ounces cream cheese, at room temperature
1/2 teaspoon pepper mint extract
8 ounces white chocolate or white chocolate chips
About 6 smallish candy canes
METHOD
In a food processor, crush the cookies finely.
Add the cream cheese and extract and mix well in the processor.
Line a cookie sheet with parchment.
Using a small spoon or scoop, form 1 inch balls with the mix and line them up on the sheet.
Place uncovered in the freezer for about 15 minutes, to make them easier to work with.
Meanwhile, using a freezer bag and a mallet, crush the candy canes and put the crumbs in a small bowl. Set aside.
Melt the chocolate. You can try to melt it in the microwave, but the chocolate will tend to burn or seize up if not done in increments. I used the double boiler method.
Place a saucepan on the stove and add 1-2 inches of water to the pan.
If you don’t have a double-boiler, place a dry, shallow, heat-safe mixing bowl over the saucepan.
Add white chocolate and turn on the stove to medium heat.
As the water begins to simmer and release steam, the steam will heat the chocolate and the chocolate will begin to melt. As the chocolate melts, keep stirring with a heat-safe rubber spatula until all of the chocolate has melted.
Watch the heat so the chocolate doesn’t burn. If it gets too thick, turn the heat down. Don’t add milk or water to thin it, as that might prevent the chocolate from setting.
Using tongs, dip each ball into the white chocolate, letting any excess drop off.
Roll the balls in the candy can crumbs and place them back on the try.
Put in the freezer for 30 minutes to help the chocolate to set.
Place the balls in a bowl and keep refrigerated.
These are guaranteed to put a smile on your face, as did spending time with friends and family this holiday.
